This salad comes together very quickly and is a nice change from green salad. It can be served immediately or chilled for several hours before serving. It’s also tasty the next day!
Ingredients
- 1 long English cucumber
- 1/2 cup finely sliced or diced red onion
- 1/3 cup sour cream
- 1 Tbsp cider vinegar
- 1 Tbsp lemon juice
- 1 tsp sugar
- 2 Tbsp fresh chopped dill or 1 Tbsp dried
- 1/2 tsp salt
- Fresh ground black pepper
- Chopped fresh chives for garnish
Step by Step Instructions
Step 1
Using a mandolin, slice the cucumber thinly. Place in a bowl.
Step 2
Slice or chop the red onion and add to cucumber.
Step 3
Whisk dressing ingredients together in a small bowl.
Step 4
Toss dressing with cucumber and red onion. Taste for seasoning, adding more salt and pepper if necessary.
Step 5
Garnish with chopped fresh chives.
Step 6
Can be served immediately or chilled for several hours before serving.
