These are delicious cookies that use all brown sugar which keeps them moist. Try to buy good fresh walnuts and nice soft dried cranberries.
These cookies freeze well.
Ingredients

1 cup butter, at room temperature

2 cups, lightly packed brown sugar

2 large eggs

1 tsp vanilla
-
2 cups old fashioned oats
-
1 ½ cups all purpose flour

½ cup whole wheat flour

1 tsp baking powder
-
¼ tsp baking soda
-
1 tsp salt
-
1 tsp cinnamon
-
1 cup coarsely chopped walnuts

1 cup chocolate chips
-
1 cup dried cranberries
Step by Step Instructions
Step 1
Preheat oven to 350F. Line baking pans with parchment paper.
Step 2
In a stand mixer beat butter and brown sugar together for 2 minutes. Add eggs one at a time. Add vanilla.
Step 3
With mixer off, add remaining ingredients. Mix everything together on slow speed until it is all incorporated.
Step 4
Form dough into heaping tablespoon balls and arrange on baking pans. Press down lightly with wet fingers. Bake for about 11 to 13 minutes, rotating the pans so that the cookies bake evenly. Cool on racks.
