This dish is so simple to make and so good. I try to remove all the bones from the fillets. Good tweezers kept in your kitchen drawer work very well for this. Run your finger along the flesh of the fish to feel the bones and pull them out.

Ingredients

  • 2 pound Salmon fillet, skin on, bones removed
  • 2 tablespoons butter, melted
  • 1 garlic clove, mashed
  • Fresh ground pepper
  • ¼ teaspoon salt
  • ¾ cup mayonnaise
  • 1 teaspoon curry powder

Step by Step Instructions

Step 1

Preheat oven to 375F.

Step 2

Melt the butter add the garlic, salt and pepper. Cool to room temperature. Lay the salmon fillet skin side down onto a foil lined baking sheet. Spread butter mixture on top. Bake the fish in the preheated oven for about 20-25 minutes, or until the flesh is firm to the touch at the thickest point. The salmon can also be cooked on the barbeque over medium-high heat on foil for about 7-10 minutes.

Step 3

Meanwhile combine mayonnaise and curry powder. Place in small serving dish and cover and refrigerate until ready to serve dinner. 

Step 4

When salmon is cooked, cut into serving pieces and pass the sauce at the table.
